CHOCOLATE CHIP COOKIE DOUGH CHEESECAKE
Chocolate Chip Cookie Dough Cheesecake Recipe
INGREDIENTS
For the Cookie dough:
- ½ cup butter, softened
- ½ cup brown sugar
- ½ cup sugar
- 2 teaspoons vanilla extract
- 1 tablespoon milk
- 1 cup all-purpose flour
- Pinch of salt
- 1 cup mini chocolate chips
- 24 Oreo cookies-finely crushed
- ¼ cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened to room temperature
- 1 cup sugar
- 4 eggs
- 1 teaspoon vanilla
- 1 tablespoon all-purpose flour
- ½ cup sour cream
- 1 cup mini chocolate chips
- 1 cup semi-sweet chocolate chips
- ⅔ cup heavy cream
- Mini chocolate chips, optional
To make cookie dough:
- In a large mixing bowl, combine butter, brown sugar, sugar, add milk, vanilla, salt and flour and beat until well combined
- Fold in chocolate chips
- Gently roll the dough into small teaspoons size balls and place them on a lightly greased baking sheet
- Place them in the freezer to harden while making the rest of the cheesecake
- Finely crush the cookies in food processor, add melted butter and blend until it is all moistened
- Press into the bottom of a lightly greased 9-inch springform pan
- In a large mixing bowl, combine cream cheese and sugar and beat until smooth
- Add eggs, one at a time, beating well after each addition
- Add flour, vanilla, sour cream and mix just until blended
- Stir in chocolate chips
- Put cookie dough balls over crust (separate 10-12 cookie dough balls for garnish), and carefully pour cheesecake filling evenly over cookie dough balls, adjusting the filling so that the cookie dough balls are completely covered
- Bake at 325 degrees for 50-60 minutes, or until the center is still slightly jiggly, but almost set
- Allow to cool completely
- Remove cheesecake from springform pan to a serving plate
- Microwave the 1 cup semi-sweet chocolate chips and heavy cream for about 30 seconds, or until melted and smooth
- Pour the topping over the top of the cake and sprinkle with the mini chocolate chips
- Fill in the top of the cake with cookie dough balls and drizzle with chocolate sauce, if desired
- Cut and serve
